14 days of Aphrodisiac Dishes #2.1 Chicken in Ginger and Sweet Potato Sauce

   
Ohh, how I love the tingling sensation ginger brings to my lips!
Here’s another recipe using our accomplice friend.

   
Chicken in Ginger and Sweet Potato Sauce.

   
The ingredients:

   
One sweet potato about ½ Lb weight, 2 large cloves of garlic, 1 cup of chicken stock, 5 whole cloves.

   
1/3 cup of table cream, I used “Media Crema” this time.

   
And of course, ginger!

   
Peel off and boil the sweet potato with a pinch of salt, until they get soft. My advice is to slice them so they will cook faster.

   
Then, blend them with the table cream, and ¼ cup of chicken stock.
 Just pause for a momment. You have to taste it! This could be a side cream or heavy soup by itself. Ayayyyy, spicy but in a mild way. Not the hot-chiles kind of spicy, but creamy, smooth and buttery, and we haven’t even added the butter yet. Ok, I have to concentrate and get back to our recipe!

   
Peel and finely grate the ginger, about 1 ½ tablespoon.

   
Also finely chop 2 garlic cloves.
Heat one tablespoon of olive oil and one of butter in a skillet, add the ginger, garlic and stir-fry for 1 minute.
 My recommendation here is to take a deep breath and suck in all the aroma, mmh, mmh!

   
Season four chicken breasts, with salt and pepper (both sides).

   
Place them in the pan and cook them over medium heat until they are lightly golden, not burned. About 4 minutes on each side.

   
They should look like this, or close to.
 Aren’t they gorgeous?

   
Meanwhile, in a heated sauce pan, roast the cloves. Transfer them to a mortar, and grind them.

   
Remove the chicken breasts to a plate and set aside.

   
Keep all that delish stuff on the pan (the smell of ginger and garlic is intense).

   
Pour in the sweet potato cream we just made.

   
Add the rest of the chicken stock,

   
ground cloves,

   
and bring to a boil, stirring.

   
Now, it’s time to bring our chicken back.

   
Return the chicken to the pan, adding the collected juices left on the plate, oh yes, more flavor my friends ;-) . Cover and cook over low heat for about 12-15 minutes.

   
Uncover the pan, remove the chicken to a plate and keep it hot. Yes, we have to do it again. Here it is why, we need to cook the sauce for another 12-15 minutes over moderate heat, to create a more intense flavor, believe me, it’s worth the trouble. Season to taste with pepper and salt if needed.

   
Then, return the chicken back with any juices to the pan and simmer for another 2-3 minutes, turning once.

   
Serve the chicken immediately and spoon the sauce over.

   
Here is a tip, for a more refined sauce, strain it, before adding it to the chicken.

   
Server with Ginger Orzo.

14 days of Aphrodisiac Dishes -#2 Light Ginger Orzo

   
Ginger is esteemed in many cultures for its power of arousal.
People have considered ginger root an aphrodisiac for centuries not only because stimulates the circulatory system but also because its scent.

   
Here is an easy ginger recipe, light and full of flavor. Try it and see if the sparks fly.

   
The ingredients we need are:
One cup of Orzo.

   
Fresh oregano leaves, about one tablespoon.
Oregano

   
A tablespoon of our special ingredient, fresh ground ginger.
Ginger_grind

   
Also one cup of sweet potatoes, cooked and cut into small cubes.

I almost forget, we also need one tablespoon of butter, one tablespoon of olive oil, salt and pepper to taste.

   
Cook the orzo in plenty of boiling salted water, until al dente, about 10 minutes.

   
Drain well, then pour the orzo into a bowl, add the butter and olive oil and toss. The butter and oil will prevent the orzo from sticking.

   
Next add the ginger, salt (only if needed), and the fresh ground pepper. And toss again.

   
Finally add the oregano leaves and the sweet potatoes, and carefully toss some more.

   
And we are done.

14 days of Aphrodisiac Dishes -#1 Rack of Rosemary Lamb and Caribbean Plantains

   
Lamb has a high zinc content. Zinc, which is required for the production of testosterone, also helps maintain semen volume and a healthy sex drive.

I have cooked this dish for my husband several times, I have no complaints ;-)

   
The meat is so tender; it will melt in your mouth.

   
Here are the ingredients needed:
Four fresh tomatoes cut into small cubes,

   
Rosemary, about 1/4 cup.

   
One cup of beef broth.

   
One cup of tomato juice.
Tomatoe juice

   
We also need sea salt, fresh ground pepper, the juice of one lime, five garlic cloves and half of a sliced onion.

   
Season the lamb with the lime juice, sea salt and fresh ground pepper.
Heat a large pan and add a tablespoon of olive oil, then add the onion and the five cloves of garlic.

   
Sear the lamb.

   
It should look like this:

   
Transfer the lamb to a large pot (oven safe).

   
Now, in a heated sauce pan, roast the rosemary.

   
Transfer the rosemary to a mortar,

   
and grind it.

   
Add the caramelized garlic cloves from the pan to the pot.

   
Sprinkle the rosemary.

   
Add the fresh tomatoes.

   
Then, the beef broth and the tomato juice.
Send to the oven for about 45 minutes at 375°F.

   
Serve with your favorite rice,

   

   
and Caribbean Plantains (Tostones).

1/2 Onion (sliced)
5 Garlic cloves
1/4 Cup Rosemary
1 Cup Tomato Juice
1 Cup of Beef Broth
Sea salt
1 Lime
Fresh ground pepper
Caribbean Plantains (Tostones).

   
Preparation
Season the lamb with the juice of one lime, sea salt and fresh ground pepper.
Heat a large pan and add a tablespoon of olive oil, then add the onion and the five cloves of garlic.
Add the lamb and sear it.
Transfer the lamb to a large pot (oven safe).
Roast the rosemary and grind it. Then, add it to the lamb with the caramelized garlic cloves and the rest of the ingredients.
Cook in the oven for about 45 minutes at 375°F.
Serve with your favorite rice, and Caribbean Plantains (Tostones).

He ordered “Pescado a la Veracruzana”. I watched while he devoured the juicy, aromatic dish, yet he still maintained his elegant posture. Was he pretending to impress me? Maybe. To this day, I still take pleasure in watching him eat.

   
Through centuries, some types of food have enhanced the passionate life.

   
Since we have started the month in which we celebrate love, I decided to hold a series of “Aphrodisiac” recipes in celebration of my love for food and love for my husband.
This is our first Valentine as husband and wife. There is a long journey ahead of us, years to come to share, why not celebrate it with a vivacious seductive fourteen days of food.

For fourteen days I will be cooking Aphrodisiac dishes with ingredients that have been used through out history to enhance physical pleasure. These sensual recipes will stir up your imagination in the kitchen and in the bedroom.

This special food marathon is dedicated to my love, my best friend, and now husband. From my kitchen to his tummy. Cooking with love and passion for him is one of my favorite things to do.
